Abstract

This article deals with the mathematical models of fermentation processes in batch, fed - batch and CSTR, for
the purpose of simulation and control, in which the influence of control variables such as pH, temperature, brix degrees,
pressure, level are seen. of the liquid, input power, speed of motor agitation. Mathematical models established through
mass and energy balances accurately predict the behavior of the fermentation process by facilitating the design and
testing of controllers which contribute to teaching in this area, since they allow evaluating the performance of controllers
such as the PID that It is the most used in this type of process and other controllers that although they are more robust
in the case of fermentation provide the same benefits.
